Plants are selected by hand and processed with artisanal techniques, harvested at the peak of their potency with the leaves and flowers left whole, intentionally. This set contains:

1) Oregano from Taygetus: Greece happens to be where the most praised varieties come from and Mount Taygetus is home to the most popular of all Greek oreganos. Pungent and peppery, organic farmers spend early mornings in the month of June handpicking this traditional variety of oregano. The bunches are then dried naturally and rubbed by hand, in order to maintain their robust and peppery taste for longer.

2) Thyme Flowers: Harvesters select the buds one by one, following an industrious process that allows you to revive the aromas right when needed by rubbing them with your fingers just before use. The purple flowers of thyme are collected one by one across the Cyclades and the Ionian coast of Epirus. They belong to the hardly known capitatus variety, the same thyme that the ancient Greeks used. Thanks to their earthy and spicy aroma, they are great with salads, boiled vegetable and white meat.

3) Bay Leaves: Praised for their incredible balsamic fragrance these bay leaves come from a small farm facing the Ionian Sea, where trees grow in an idyllic setting pretty similar to the one where god Apollo fell in love with the nymph Daphne!

4) Smoked Chili Flakes: The municipality of Almopia in Northern Greece is one of the few areas that produce bukovo, a Balkan variety of red horn peppers named after the Slavic word for “spicy”. The producer smokes his peppers using birch wood that lasts for weeks. The flakes are earthy, sweet and mildly spicy.

5) Fragrant Fennel Seeds: Probably the finest you've ever seen or tasted. They come from a family farm in central Greece near Pelion, who sells most of his production to tsoupouro/ouzo distillers. These warm, pleasantly fresh fennel seeds have a delicious anice-liquorice aroma that pairs well with both sweet and savory dishes. Good with fish and seafood, leeks, pork and cakes.

6) Rosemary Leaves: Hand-harvested from a small organic family farm in the mountains of Epirus, ideal for home-ground spice blends and yummy roasts
