The organic farming methods we use with care for the environment, in combination with our milling experience, knowledge, tradition, and modern technology, allow us to offer this exceptionally high quality extra virgin olive oil.
Olympia Variety is an olive cultivar located in Ancient Olympia which was almost under threat, as they produce less olives than other varieties and were largely neglected by farmers. After a lot of studies, research and trials we were excited to discover that through a careful extraction process, this significant variety is the richest in phenols throughout Greece, not to mention its amazing flavors and aromas.Awards

What Is Early Harvest?
In the Ancient Greeks’ time, olive oil made from unripe, or “early harvest” olives was an invaluable medicine in the hands of Greek doctors. Hippocrates, considered to be the “Father of Western Medicine,” documented 60 different health conditions that could be treated with such olive oil. The Greek name “OM-PHA-KI-NON,” or “Omphacium,” was given to this class of olive oil because it is made from unripe olives.
The appreciation of extra virgin olive oil not only as food, but also for reasons such as promotion of health/beauty has been an essential part of Greek culture for millennia. Omphacium (Olympia Variety) Early Harvest is an oil rich in antioxidants and anti-inflammatories, as well as phenols such as oleocanthal, perhaps the most important of all phenols. This compound has been shown in recent studies to have numerous health benefits that or only beginning to be understood. Olives are a stone fruit much like cherries, peaches, plums, and apricots. What we all call “oil” is really more of a fresh fruit juice in this case. Real extra virgin olive oil is extracted with purely mechanical means, without heat or chemicals and no refinement whatsoever.
Store in a cool place. Enjoy your olive “juice” as quickly as possible once it has been opened, and make sure to keep the lid on when not in use.
